Whole Wheat Bread

I had a friend ask me to share my whole wheat bread recipe so I thought I would just share it with everyone :) I know I have shared my bread machine one but this one is the one I use the most since I received a wonderful gift of my Kitchen Aid Mixer.

Whole Wheat Bread
  • 2 1/2 T yeast
  • 1 T sugar
  • 2 cups warm water
mix together to activate yeast

  • 4 cups whole wheat flower
  • 1/4 cup powdered milk (if you don't have adjust your water to 1 cup warm water above and add 1 cup milk to the mix later on when you add your eggs)
  • 2 t sea salt
  • 3 T sugar (you can use honey also)
Mix these ingredients in large bowl or mixer. Make sure to combine them well.

After the yeast mixture is bubbly add this slowly to the mixer or bowl. Mix well. At this time add 2 eggs (and milk if you didn't use powdered milk above) and 1/3 cup of coconut oil. now stir in 2-4 cups more of whole wheat flour. The amount is not an exact science because it really depends on the time of year, temps and your house to know exactly the amount. If you are using a mixer let in mix with the dough hook for about 5-10 minutes otherwise kneed dough by hand for up to 20 minutes. Again this part depends on many factors.

Let rise covered until it has doubled in size. I know sometimes I let mine rise in my oven with just the light on.

Next oil your 2 loaf pans. Dump dough out on a floured surface and punch it down. Kneed it for a few minutes to get rid of air bubbles. Cut the dough in 2 equal halves put it in the pans. I roll mine out with a roller and roll it up and then pinch the ends and place them in the pans. Some people do them differently. Now again cover the dough and let it rise again doubling in size.

Bake for 30 minutes at heated oven @350.

Let them cool for a few minutes then dump the bread out on a towel and let them cool completely before cutting. I know it is so yummy to eat warm bread you can but it makes it harder for cutting later on when you want to make a sandwich. Enjoy

I use this same recipe to make buns and cinnamon rolls. You can also make cinnamon or chocolate swirl bread by roling out the dough like I explained earlier and sprinkling cinnamon and sugar or coco and sugar on the dough before you roll the dough up and place it in the pan. You do have to add quite a bit though to get the yummy flavor so don't just dust it on.
